- 4 cloves of thinly chopped garlic
- 1 cup of diced tomatoes, you’ll need more to garnish on top
- 1/2 tsp of kosher salt, you’ll need more for seasoning the eggplants belly
- 1/4 tsp of black pepper
- 1/2 cup of chopped Italian parsley you’ll need more as a garnish
- 1 cup of hot water
- 1 tbsp of tomato paste
How to make Turkish karniyarik?
Roasting the eggplants
- Heat up the oven to 400 degrees Fahrenheit. Then, cover a baking sheet with foil.
- Take a fork and make 7-10 holes in each eggplant.
- Next, put them on the baking sheet we got ready earlier and bake for about 50 minutes up to an hour. Remember to flip them a couple of times so they cook evenly.
- When they’re finished cooking, grab them from the oven and let them cool down on the countertop.
Making the meat sauce
- Put some oil in a big frying pan and heat it on medium.
- Next, toss in the onion, cumin, pepper, and beef into the pan. Keep stirring it all for about 10 to 12 minutes while it cooks.
- Mix in the garlic and let it cook for just 30 seconds.
