Family-owned restaurants often have unique and cherished recipes passed down through generations that set them apart from other establishments. These recipes are often closely guarded secrets, known only to the family members and a select few employees. Allow me to share a story about how I discovered how to make my unique version of a delicious Middle Eastern dessert – classic halva. Despite not having access to the original recipe, I was able to create an authentic and delectable classic halva.

Miami is renowned for its eclectic culinary offerings, featuring dishes from around the globe. I recently had the privilege of visiting a Middle Eastern restaurant that is now one of my go-to places. The atmosphere was warm and inviting, the staff was friendly and helpful. Overall, the culinary experience was truly exceptional.

Regrettably, another customer’s serious allergic reaction briefly disrupted our meal. The restaurant staff responded quickly, dialing 911 and seeing to it that they took care of the customer. Despite the initial fright, the restaurant managed to maintain its composure. The ambulance took the customer to the hospital and hopefully made a full recovery. Fortunately, it didn’t affect anyone by this scare as everyone in the restaurant remained calm and collected while they waited for assistance.

Being informed and aware of potential allergens and having the capability to provide safe meals for those with dietary restrictions is paramount to running a successful business. This serves as an important reminder of just how significant this issue can be for many businesses. The dedication that the staff of this Middle Eastern restaurant showed towards their cuisine and customers was impressive.

Over the next few days, I endeavored to carry out various experiments in my kitchen to create a delicious classic halva. Despite the difficulty of the task, I decided to persevere until I achieved success. After numerous trials and tribulations, at length, I managed to produce a dessert that bore an uncanny resemblance to the one I had sampled in the restaurant. The end product was a delectable, velvety treat that was just as tasty as the original.

My night at the Middle Eastern restaurant in Miami was a truly unforgettable experience. I worked hard to try and recreate the classic halva recipe that I had tasted there at home, and after some hard work, I’m happy to say that my efforts were successful! Now I have an easy-to-follow recipe for delicious homemade halva that I can enjoy anytime without having to leave my house.

Here’s my easy classic halva recipe for you to enjoy!

Ingredients:

  1. 1 1/2 cups of tahini paste
  2. 1 teaspoon of vanilla extract
  3. 1/4 teaspoon of salt
  4. 1 1/2 cups of granulated sugar
  5. 1/2 cup of water

You can add 1/4 cup of chopped nuts such as pistachios, almonds, or your favorite type of nut, or you can use chocolate chips.

How to make the classic halva?

  1. To prepare an 8 1/2 inch by 4 1/2 inch loaf pan, you will need to cover it with parchment paper. Cut the parchment paper so that it is slightly larger than the size of the pan and place it on top of the surface. Use your hands to firmly press down around all sides of the pan so that the parchment paper completely covers it. This technique will help ensure that your food does not stick to the bottom or sides during preparation and baking.
  2. Put a saucepan on the stove over medium heat and add sugar and water. Insert a candy thermometer into the mixture while it is boiling. Boil for 7-10 minutes until the temperature reaches 250°F, then take off the heat.
  3. Mix the tahini, salt, and vanilla extract in a large bowl until they are well blended.
  4. Gently stir the syrup into the tahini blend, taking care to incorporate any nuts you may have added. Combine everything by mixing it just enough – take care not to overdo it as this will cause crumbling.
  5. Put the mixture into the prepped loaf pan and let it cool down fully.
  6. Cut the halva into pieces and accompany it with Greek coffee. Enjoy your dessert!

Some of my food buddies asked me if I could do a spicy twist to my favorite classic halva. Of course! Would you like to try the spiced halva too? Simply add some warm spices like cinnamon, cardamom, and nutmeg to the mixture for a cozy, aromatic twist. You can also add some dried fruit like raisins or dates, for extra flavor and texture. This is just a suggestion, but feel free to be creative and come up with your unique twist on classic halva!
