Ingredients for kunafa with semolina:
The dough:
- 3 cups of semolina
- 1 cup of sugar
- 1.25 cups of ghee
- The cheese ingredients:
- 3 cups of akkawi cheese (Soaked in water to remove salt)
- 100 grams of Mozzarella
Sugar Syrup:
- 2 cups of sugar
- 1 cup of water
- 1/2 tablespoon of blossom water
- 2 teaspoons of rose water.
- 1 teaspoon of lemon juice.
How to make kunafa with semolina?
- To prepare the kunafa semolina, mix together ghee, semolina, and sugar in a large bowl until it forms a dough ball.
- Preheat the oven to 180 degrees, and place the dough in the oven for 10 minutes. Let the dough rest for 5 minutes.
- Take the dough out of the oven and place it in a mixer, and blend until it resembles sand.
- In a saucepan, mix together akkawi cheese and sugar.
- Roll out a cup of ghee on a tray. Spread the dough powder over the ghee.
- Gently press the dough with your hand, then sprinkle mozzarella cheese on top followed by unsalted cheese.
- Put the tray into the preheated oven at 180 degrees for 30 minutes.
- Let the kunafa cool for 10 minutes, then turn it over so that the dough forms the top layer and the cheese the bottom layer.
- Prepare the sugar syrup by bringing a saucepan and adding water, sugar, orange blossom water, rose water and lemon juice. Mix the ingredients together until the sugar dissolves. Place the pot on the stove and bring it to boil while stirring.
- Once the kunafa is cooled down, pour the syrup over it and serve.
