Everybody knows me as a passionate enthusiast of Middle Eastern cuisine. So, I was excited to visit a highly acclaimed restaurant in Philadelphia that guaranteed an accurate representation. However, unexpectedly, the evening proved to be far more than just the savory feast I had anticipated. In fact, it was an unforgettable and truly remarkable experience.
Upon arriving, The restaurant staff greeted my family and me with the warm hospitality that is a characteristic of the Middle East. Moreover, the aroma of spices and the meat on the grill wafted through the air. We sat at a cozy table by the window.
We perused the menu and decided on a dish that caught our eye – baked fish, Mediterranean style. While we waited for our food, we chatted and admired the decor of the restaurant. Colorful tapestries and intricate tiles adorned the place.
But just as our food arrived, something unexpected happened. One of the waitresses, a young woman with a beautiful voice, began to sing a traditional Middle Eastern song. The room fell silent as she captivated us with her soulful performance.
The fish was exquisitely tender, flavored with tangy lemon and fragrant herbs. couldn’t help but feel as if I had been visiting one of the sun-kissed Mediterranean coasts. An experienced Egyptian old woman expertly prepared the dish, demonstrating her obvious skill and knowledge in the kitchen. Toward the end of the meal, I mustered the courage to ask our server if I could have the recipe for the baked fish. To my surprise, she agreed and promised to bring it to me after we finished our meal.
I eagerly awaited the recipe as we finished our dessert, sweet and nutty baklava. Soon enough, the waitress returned with a handwritten note that contained the recipe for the Mediterranean-style baked fish. I was extremely happy to have the recipe, and couldn’t wait to try it out in my own kitchen.
To make this delicious dish, they used thinly sliced leeks, finely chopped garlic cloves, and a generous amount of olive oil. Additionally, they used several freshly picked basil leaves, orange roughy fillets seasoned with salt and pepper, ripe olives, a medium-sized lemon for juice and zest, and newly picked rosemary leaves. In addition to these essential ingredients, they added some plum tomatoes in order to combine the flavors and create a truly delectable dish. The tomatoes were an important component that helped to bring all of the tastes together and make this dish something special. You could obtain the ingredients of the dish with relative ease as they were quite straightforward. However, blending these ingredients together in a special way gave the dish its uniqueness.
To begin, they heated a pan on the stove and added the olive oil. Once it was heated, they threw in the leeks and garlic and sauté them until they were soft and translucent. After a few minutes of cooking, they added the basil leaves to the mix and continued to sauté them for several more minutes until everything was cooked properly. Next, they took the fish fillets and carefully placed them in a greased baking dish. Then, they sprinkled them with salt, ensuring an even seasoning.
On top of the fish, they added a delicious layer of sliced plum tomatoes on top, followed by some drained ripe olives. Lastly, they sprinkled a combination of sautéed leeks and freshly chopped basil to finish off the dish. After preparing the dish, they finished it off by sprinkling freshly squeezed lemon juice and a generous helping of pepper to give it an extra zing. To bring out its flavor even more, they added sprigs of rosemary for an added aromatic touch.
They baked the dish in the oven until the fish was cooked through and the vegetables were tender. The aroma of the dish as it cooked was tantalizing, and we couldn’t wait to dig in. Finally, when it arrived, we couldn’t help but notice that the combination of the juicy fish, tangy olives, and fresh herbs was delicious, and we savored every bite.

Ingredients:
- 1 cup of thinly sliced leeks, using only the white portion.
- 2 garlic cloves, finely chopped
- 2 teaspoons olive oil
- 12 sizeable, newly-picked basil leaves
- 1-1/2 pounds orange roughy fillets
- 1 teaspoon of salt
- 2 sliced plum tomatoes
- 1 can of drained ripe olives, sliced
- 1 medium-sized lemon is needed.
- 1/8 teaspoon of pepper
- 4 sprigs of newly picked rosemary
How to make Mediterranean-style baked fish?
- Begin by heating some oil in a nonstick skillet and cooking the leeks and garlic until they are soft. Afterward, take the cooked mixture off of the heat and set it aside.
- Take a 13-inch by 9-inch baking dish and spray it with cooking oil. Place the basil in the baking dish, followed by the fish fillets. Sprinkle salt on the fish, then put the leek mixture on top.
- After the fish has been cooked, layer some thinly sliced tomatoes and olives over it. Place half of a lemon cut into slices on top, then squeeze the juice from the other half over everything. Finally, finish with a sprinkle of pepper.
- After placing the dish in the oven, set it to 425° and bake for 15-20 minutes. Test if it is done by seeing if the fish can be separated with a fork. To finish, decorate with rosemary as a garnish.
To give this classic Mediterranean-style baked fish recipe a unique twist, try adding some sliced fennel before baking. Fennel has a slightly sweet and anise-like flavor that complements the tangy lemon and salty olives in the dish, and also adds a nice crunch.
