Ingredients:
- 1 kg of boneless and skinless chicken thighs
- 1 tablespoon of olive oil (or as needed)
- 1 brown onion, roughly chopped
- 2 garlic cloves, peeled and crushed
- 1 teaspoon of cumin seeds
- 1/4 teaspoon of ground turmeric
- 1 cup of long-grain rice, rinsed and drained
- 1 cup of chicken stock
- 3/4 cup of water
- 1/4 teaspoon of salt
- Fresh lemon, to serve
- Shawarma sauce, to serve.
Spice mix for chicken shawarma:
- 3 teaspoons of olive oil
- 1 tablespoon of ground coriander
- 3 teaspoons of ground cumin
- 2 teaspoons of garlic powder
- 1 teaspoon of smoked paprika
- 1 teaspoon of ground cardamom
- 1 teaspoon of onion powder
- 2 teaspoons of salt.
How to make yellow rice shawarma?
- Combine the 3 teaspoons of olive oil and shawarma spices (consisting of ground coriander, cumin, garlic powder, smoked paprika, cardamom, onion powder, and salt) in a bowl.
- Add the chicken thighs to the bowl and coat them with the spice paste by turning them.
- Add an additional tablespoon of olive oil to a pot with tall sides and heat it.
- Put the chicken thighs in the pot and cook each side until they are lightly browned. Once finished, take them out of the pot and place them on a plate.
- If needed, add more olive oil to the same pot and fry the chopped brown onion until it is soft.
- Next, add 1 teaspoon of cumin seeds, and 2 cloves of crushed garlic and fry for 30 seconds. After that, mix in 1 cup of rinsed and drained rice along with 1/4 teaspoon of turmeric and 1/4 teaspoon of salt and stir to coat.
- Combine the chicken stock and water (1 cup of chicken stock and 3/4 cup of water) in a pot and bring it to a simmer.
- Once the chicken has simmered, position it on top of the rice, seal it with a tightly-fitted lid, and reduce the heat to its lowest setting. Cook without stirring for 15 minutes.
- After 15 minutes, turn off the heat and let it sit for an additional 10 minutes without lifting the lid.
- Once the chicken has cooked for the last 10 minutes, take it out and slice it (if desired) or serve it whole. Fluff up the rice with a fork and dish it up alongside the chicken along with some fresh lemon (according to your taste). Serve shawarma sauce on the side.
