  • 1/4 cup of freshly chopped cilantro
  • 2 thinly sliced green onions
  • 1/4 cup of extra-virgin olive oil
  • 2 tablespoons of harissa
  • 1 tablespoon of honey
  • 1 lime juice and zest of
  • 2 chopped cloves of garlic
  • 2 teaspoons of freshly grated ginger
  • 1 teaspoon of ground cumin
  • Salt to taste
  • Freshly ground black pepper to taste

How to make the Moroccan carrot salad?

  1. First combine carrots, raisins, peanuts, cilantro, and green onions in a large bowl.
