  • 1/2 cup of breadcrumbs

How to make the Syrian muhammara dip?

  1. Place the oven rack in the upper third of your oven and switch on the broiler.
  2. In a skillet over medium-low heat, lightly toast 1 cup plus 1 tablespoon of walnuts for 10 minutes until the aroma is released.
  3. Place three large red bell peppers on a baking sheet. Roast the bell peppers in the oven until they are charred (around 15 minutes). Make sure to flip the peppers halfway through so both sides can become charred.
  4. Once the peppers have finished cooking, put them in a paper bag or a large Tupperware and close it for 10 minutes. This will trap the steam inside which will make it easier to take off the skin.
  5. Put the walnuts in a food processor and blend with 3 tablespoons of pomegranate molasses, 2 tablespoons of olive oil, 3 cloves of peeled garlic, 1 tablespoon of freshly squeezed lemon juice, 1 teaspoon of ground cumin, 1 teaspoon of kosher salt and 1 teaspoon of Aleppo pepper flakes. Blend the ingredients several times to combine them.
  6. Peel the skin off each roasted pepper, one by one, and take out the stem and seeds. Place these in a food processor and blend until the mixture is smooth.
  7. Mix 1/2 cup of breadcrumbs into the mixture, and blend to combine. If it is too thin, you can add more breadcrumbs; if the mixture is too thick, try adding some olive oil and lemon juice.
  8. After transferring the muhammara to a bowl, make sure it is evenly spread. To finish off, pour on some pomegranate molasses and decorate with pomegranate seeds and chopped walnuts (1 tablespoon).
