So here is how I create Lebanese zucchini fritters.
Ingredients:
- 5 eggs from free-range chickens
- 1 crushed garlic clove
- ¾ tsp of Baharat (a Lebanese spice mix)
- 1 ½ teaspoons of salt
- ½ cup of self-raising flour, sifted (about 75 g)
- ½ cup of finely chopped parsley
- ¼ cup of finely chopped mint
- 1 ½ cups of grated Lebanese zucchini
- ¼ cup onion or ½ cup shallots (green only).
- ¼ cup of olive oil for frying
- 1 cup of plain yogurt
- 1 garlic clove
- 2 vine-ripened tomatoes, chopped (optional)
- Lebanese bread for serving
How to create Lebanese zucchini fritters?
- Wash and dry the herbs the day before you are ready to cook. Chop them up into small pieces. This step is essential for creating a tasty dish.
- In a large bowl, whisk together the eggs, garlic, baharat, and salt until combined. Then gradually add the flour to create a smooth batter. Lastly, stir through the herbs, zucchini, and onion until it is evenly distributed.
- Coat a frypan in olive oil and turn the heat to medium. Scoop 6 heaped tablespoons of the mixture and cook both sides of each fritter for 2 minutes until they are golden brown. Repeat the process with any remaining mixture.
- Using a paper towel to soak up extra oil, fritters should be transferred to a dish. Serving either warm or at room temperature. Maybe served with yogurt, garlic, and chopped tomato, or you can roll them up into Lebanese bread.
