Did you know that hummus is the most common dish in Egypt? I didn’t know that and up to that evening in the following story, I didn’t know how to make hummus. However, this generous Egyptian restaurant owner taught me how to make this supremely spicy hummus. As a result, I will always be grateful to him.

It was a typical Friday evening in Manhattan, so my friend and I decided to go out for dinner. We had chosen the perfect spot to enjoy a quick meal. As we were strolling down the street, we stumbled upon a diminutive Middle Eastern restaurant that seemed to be quite promising. We thought it would be wise to enter and explore what they had to offer. Upon entering, the scent of freshly cooked spices immediately filled our noses with an exquisite aroma, causing us to become even more intrigued by this delightful place.

When we entered the restaurant, we were warmly greeted by an Egyptian man in his middle age. At a small table, we took a seat to inspect the menu being offered. After taking a look at the menu, I was delighted to see that supremely spicy hummus was an option. I decided to give it a try and my friend, who had also been perusing the menu, chose the same dish. Taking a leap of faith, we both eagerly anticipated our first experience with this delicious Mediterranean dip.

As we sat and waited for our meal, we certainly couldn’t miss the birthday celebration that was unfolding in the restaurant. The atmosphere was festive and lively, — decorations everywhere — to celebrate the birthday boy, surrounded by his closest family and friends. What an enchanting sight that made us feel somewhat jealous.

At our tiny table in the Middle Eastern restaurant, we braced ourselves for what promised to be a remarkable feast. Anticipation mounted as the supremely spicy hummus finally arrived – one sip was enough to confirm that it was nothing short of delicious. The hummus that we had was simply divine! Packed with spicy flavor, just to my liking, the taste consisted of numerous deep notes making it all too irresistible. We could not help but indulge! We eagerly scooped up spoonful after spoonful, savoring every bite.

As we dined, the owner of the restaurant, the welcoming Egyptian man, initiated an enjoyable interaction with us. He shared the story of his trans-continental voyage to America and graciously showcased his passion for cuisine by cooking a delightfully scrumptious feast. We had a night full of pleasure and delight – excellent company, laughter, and superb cuisine. His remarkable experiences mesmerized us as he entertained us with his captivating tales – a true storyteller in every sense of the word.

As the night progressed, I found myself completely taken with the delicious supremely spicy hummus. Understanding its irresistible flavor, I thought to myself that I had to have the recipe, so I humbly inquired with the owner if he would kindly share it with me. I never expected him to agree, but he did, and even went a step further by offering to teach me how to cook the said dish. His exciting offer thrilled me so much that I could not wait any longer for the sweet opportunity to make this delectable meal for myself back at home.

We had a great night! The aroma of the delightful food we ate was only matched by the hospitable personalities of our new acquaintances. Our evening ended as a success due to the scrumptious meal and enjoyable conversations. The supremely spicy hummus from that little restaurant is a cherished menu item for me, and I’m most appreciative of the owner’s generosity in sharing his recipe. It’s certainly one dish I anticipate making again at home and will take delight in having it savored by my beloved family.

So here is the recipe for my favorite supremely spicy hummus:

Ingredients:

  1. 15 ounces chickpeas, drained.
  2. 2 cloves of garlic
  3. 1 tbsp of sesame oil
  4. 1 tbsp of lemon juice
  5. 1 tsp of cumin
  6. 1 tsp of chili powder
  7. 1 tsp of ground coriander
  8. 1 tsp of red pepper flakes (or 1/2 tsp for mild spice).
  9. 2 tbsp of tahini
  10. Sea Salt to taste
  11. Ground black pepper to taste

How to make the supremely spicy hummus?

  1. Drain the chickpeas using a colander.
  2. Place the chickpeas, spices, sesame oil, lemon juice, garlic, and tahini in a food processor or blender.
  3. Blend the ingredients until smooth.
  4. Season with salt and pepper to taste.
  5. Transfer the hummus to a shallow serving bowl and serve with warm pita chips or wedges.

To make the pita chips:

  1. Preheat your oven to 425 degrees F.
  2. Slice the pita bread into even wedges.
  3. Brush them with olive oil, then sprinkle them with salt.
  4. Place them on a baking sheet and bake for 5-7 minutes, or until crispy.

Tip: For a more intense flavor, prepare the hummus one hour before serving to allow the ingredients to marinate.
