Embark on a culinary adventure that transcends borders and transports you to the vibrant streets of Cairo. Additionally, experience the charm of Alexandria’s tea houses with the sugared Egyptian bread rolls (aka shoreek). These delicate, golden rolls with a sprinkle of sugar are a cherished family recipe. It was discovered in a Middle Eastern restaurant in Springfield, Virginia.

One afternoon in Springfield, Virginia, my family and I stepped into a Middle Eastern restaurant. It seemed to beckon us with the tantalizing aroma of exotic spices. The golden rays of the afternoon sun filtered through the windows, casting a warm glow upon the bustling scene. However, little did we know that this afternoon would be etched into our memories forever. We discovered a delightful treat that would soon become a cherished family recipe.

As we settled into our seats, fellow diners’ soft chatter and laughter filled the air. The menu offered an array of tantalizing dishes, each boasting flavors, and traditions from the Middle East. While we were perusing the menu, a faint commotion began to stir near the restaurant’s entrance. Intrigued, we turned our heads to witness a birthday celebration in full swing. The celebration’s highlight was a platter of bread rolls presented by an elderly Egyptian woman whose eyes sparkled with pride and delight.

The rolls were a sight to behold – golden and glistening, with a delicate sprinkle of sugar on top. Additionally, their aroma danced through the air, beckoning us to indulge in their sweet embrace. The moment we took our first bite, the soft and fluffy texture melted in our mouths. Moreover, it gave way to a burst of sweetness that enveloped our taste buds. It was a moment of pure culinary bliss.

Unable to resist the temptation any longer, I summoned the courage to approach the elderly Egyptian woman who had created this delectable delight. I expressed my admiration for her culinary skills and requested the secret behind her bread rolls. Consequently, the woman hesitated, but with persistence and genuine admiration, she finally relented.

To recreate this culinary masterpiece, gather flour, sugar, baking powder, dry yeast, salt, an egg, vanilla extract, melted butter, and warm milk. In addition, for the finishing touch, extra sugar for sprinkling.

The journey to bring the bread rolls to life begins with a delightful dance of ingredients. The flour, sugar, baking powder, dry yeast, and salt come together, forming a foundation that promises a delicate and airy texture. The large egg and vanilla extract join the ensemble, infusing the dough with richness and a hint of sweetness. Finally, the oil or melted butter adds a luscious touch, ensuring a tender crumb that will melt in your mouth.

To enhance your culinary experience, consider pairing the bread rolls with a few complementary items. For example, a dollop of creamy, tangy labneh or a drizzle of rich, floral honey would add depth to the sweetness of the rolls. You could also serve them alongside a selection of exotic fruits, such as juicy figs, succulent dates, or ripe pomegranate seeds, to create a delightful balance of flavors.

Furthermore, for a more indulgent twist, a scoop of velvety vanilla ice cream or a dusting of powdered sugar would elevate the rolls to a decadent dessert. And if you seek a touch of contrast, sprinkling crushed pistachios or almonds over the rolls would introduce a delightful crunch, adding texture and complexity to each bite.

Here is how I create these bread rolls at home.

  1. In a deep bowl, thoroughly combine the dry ingredients: 2 cups all-purpose flour, ⅓ cup granulated sugar, 1 teaspoon baking powder, 1 tablespoon dry yeast, and ⅛ teaspoon salt.
  2. If using oil or melted butter, add it to the dry ingredients and mix well.
  3. In a separate bowl, beat the large egg with ½ teaspoon vanilla extract. Then, add this mixture to the bowl with the dry ingredients and combine thoroughly.
  4. Gradually add warm milk to the mixture, mixing as you go, until a soft but not overly sticky dough forms.
  5. Transfer the dough to a lightly oiled bowl, cover it, and let it rise for approximately two hours or until it has doubled.
  6. Once the initial rise is complete, gently punch down the dough, cover it again, and let it rise for another two hours. (Refer to Note2 and Note3)
  7. Divide the dough into six equal parts and shape each into a ball. (Note4)
  8. Shape each ball into a rope by rolling it between your hands. Then, form each rope into a roll shape, tucking the ends underneath.
  9. Arrange the rolls in a baking dish lined with parchment paper.
  10. Cover the rolls and let them rise for another 30 minutes.
  11. Preheat your oven to 350°F (175°C).
  12. In a small bowl, prepare the egg wash by whisking together 1 large egg and 1 tablespoon of water or milk. Additionally, you may optionally add ⅛ teaspoon of vanilla extract to enhance the flavor of the wash.
  13. Brush the rolls with the prepared egg wash, ensuring they are evenly coated. Finally, sprinkle granulated sugar over the rolls for an extra touch of sweetness.
  14. Place the baking dish with the rolls into the preheated oven. Bake them for approximately 15-20 minutes, checking their color after 12 minutes. The rolls are ready when they turn a beautiful golden brown.

These sugared Egyptian bread rolls can transport you to various flavors and traditions. Whether you have them as a delightful breakfast treat, a satisfying afternoon snack, or a memorable finale to a Middle Eastern feast. So, gather your ingredients, let their enticing aroma fill your kitchen, and embark on a culinary adventure that transcends borders and creates lasting memories.
