Come with me on a journey to a Middle Eastern restaurant in Chicago, where I had the pleasure of tasting their incredible keto-baked salmon. It happened just moments before a fire broke out in a nearby building. Even though I didn’t have the original recipe from the owner, I decided to recreate this unique dish on my own. Here I’ll share with you how I did it!

One morning, I found myself in a restaurant specializing in Middle Eastern cuisine located in the bustling city center of Chicago. I had heard great things about the restaurant’s keto-baked salmon, and I was eager to give it a try. As I sat down and waited for my order, I couldn’t help but notice the young Lebanese guy behind the counter who was busy preparing my meal. There was something about the way he moved and the care he took with each ingredient that made me think this would be a special meal.

I took my first bite of salmon and the flavors astounded me. Zaatar and garlic combined together harmoniously, while the salmon itself was cooked to perfection – both succulent and tender. I couldn’t help but eat more of it! I savored every bite, and with each one, I became more convinced that this was one of the best dishes I had ever tasted.

However, my enjoyment of the meal was cut short when I heard sirens outside. I looked out the window and saw that a building across the street was on fire. Panic set in as people rushed to leave the building and find safety. The young man who had prepared my meal remained calm, but I could tell he was concerned for the safety of his customers and the people in the burning building.

As we made our way to the exit, I stopped the owner and begged him for the recipe for the keto-baked salmon. I wanted to recreate this dish at home and share it with my friends and family. He hesitated at first, but after some convincing, he finally relented and scribbled down the ingredients and instructions on a piece of paper.

The ingredients for the keto-baked salmon dish are a perfect combination of fresh produce, herbs, spices, and a delicious fillet of salmon.

First, I halve the grape tomatoes and roast them in the oven. Grape tomatoes are small, juicy, and sweet, and their flavor is intensified when roasted. They are a great source of vitamins C and A and add a pop of color to the dish.

When cooked, it has a tender and flaky texture and a rich, buttery flavor. In this recipe, I coat the salmon fillet in the zaatar garlic paste and roast it in the oven until it cooks perfectly.

So, this is how I recreated the incredible keto-baked salmon in my kitchen.


  • Grape tomatoes (2 cups), halved (approximately 10 oz)
  • Broccoli florets (6 ounces)
  • Garlic (5 to 6 cloves), minced
  • Extra Virgin Olive Oil
  • Salt and pepper, to taste
  • Zaatar spice (2 teaspoons)
  • Coriander (1 teaspoon)
  • Salmon fillet (1 pound), skin removed
  • Lemon (1 piece), juiced

How to make keto-baked salmon?

  1. Set the oven to 400°F before baking.
  2. Mix the grape tomatoes and broccoli in a big bowl. Drizzle 2 tablespoons of olive oil over the ingredients and toss to coat.
  3. For seasoning, mix the veggies with salt and pepper, 1 tablespoon of minced garlic, 1 teaspoon of zaatar, and ½ teaspoon of coriander. Mix the ingredients until coating all vegetables evenly.
  4. Move the vegetables onto a baking sheet and raise the edges.
  5. To prepare the salmon, make sure to pat it dry and season it with salt and pepper. Then, pour some olive oil on top of it and spread the remaining garlic evenly. Finally, complete the dish by sprinkling zaatar and coriander over the fish.
  6. Divide the salmon into 4 equal parts and arrange them with the vegetables on a baking sheet. Add additional olive oil as needed. Bake the salmon thoroughly and soften the vegetables, usually taking 15-16 minutes.
  7. After cooking the salmon in the oven, take it out and squeeze some lemon juice over it. Top with more zaatar as a seasoning before serving.
  8. Enjoy this delicious dish with cauliflower rice and a side salad of your choice.
