  • 1 quartered and coarsely sliced red onion
  • 2 deseeded and coarsely sliced red pointy peppers (or red bell peppers)
  • 1 small wedges of lemon
  • Fresh bay leaves, 5 or 6 pieces
  • 2 tbsp. / 30 ml of olive oil (for the vegetable roasting)

The marinade:

  • 30 ml / 2 tablespoons of olive oil
  • Juice from ½ lemon
  • 1 – 2 teaspoons of Turkish red pepper flakes or chili flakes
  • Salt and black pepper to taste

How To Make Keto Fish Kebabs in the Oven?

  1. First, soak wooden skewers in water for 15 minutes before using them. This will prevent them from burning in the oven.
  2. Next, preheat your oven to 180 C / 350 F.
  3. Slice your preferred firm-fleshed fish, such as cod loin, into bite-sized pieces roughly 3 cm/1.2” each.
  4. Put the fish in a bowl, and mix in olive oil, lemon juice, and red pepper flakes. Add salt and black pepper to season. Gently cover the fish chunks with this marinade.
  5. Cover the bowl and let it sit for 15 minutes to marinate, allowing the fish to soak up the flavors.
  6. In the meantime, spread chopped red onion, red pointy (or bell) pepper, and green pepper slices on a baking tray. Drizzle 2 tbsp olive oil over them. Season with salt and ground black pepper, and mix thoroughly.
  7. Skewer the fish, lemon wedges, red onion, and red/green pepper slices, alternating. Add one or two bay leaves to each skewer. Brush the kebabs with any remaining marinade.
  8. Arrange the skewers on one end of your baking tray. Put the rest of the chopped vegetables beside the fish kebab skewers. Bake them in the oven for 20 minutes.
